Portuguese Clam Stew

Savor the rich and comforting flavors of Portuguese clam stew, a delightful dish that combines fresh clams with aromatic vegetables, herbs, and spices in a savory broth. This hearty stew is perfect for a cozy dinner or a special occasion.

Ingredients:

  • 2 pounds fresh clams (such as littlenecks or cherrystones), cleaned
  • 4 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup dry white wine
  • 2 cups vegetable or seafood broth (find my broth recipes HERE and HERE)
  • 1 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 bay leaf
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Crusty bread (for serving)

Instructions:
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion and bell pepper to the pot and sauté for about 5 minutes, or until the vegetables are softened.
3. Stir in the minced garlic and cook for an additional minute until fragrant.
4. Add the diced tomatoes (with their juice), white wine, vegetable or seafood broth, paprika, crushed red pepper flakes (if using), bay leaf, and salt and pepper to taste. Bring the mixture to a simmer.
5. Reduce the heat to low and let the stew simmer for about 10 minutes to allow the flavors to meld.
6. Add the cleaned clams to the pot, cover, and cook for about 5-7 minutes, or until the clams have opened. Discard any clams that remain closed.
7. Stir in the chopped parsley and remove the bay leaf. Adjust seasoning with salt and pepper as needed.
8. Serve the Portuguese clam stew hot, with crusty bread on the side for dipping into the flavorful broth.
