Pineapple Upside-Down Cake

This classic dessert features sweet caramelized pineapple and cherries atop a buttery cake, creating a delightful combination of flavors and textures. Perfect for special occasions or a simple family gathering, this cake is sure to impress.

Ingredients:

• ½ cup unsalted butter
• 1 cup brown sugar, packed
• 1 can (20 oz) sliced pineapple in juice, drained (reserve juice)
• 10-12 maraschino cherries
• 1 ¾ cups all-purpose flour
• 1 tablespoon baking powder
• ½ teaspoon salt
• ¾ cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• ½ cup milk (or reserved pineapple juice)

Instructions:

1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
2. In a small saucepan, melt the butter over low heat. Stir in the brown sugar until dissolved. Pour the mixture into the bottom of the prepared cake pan.
3. Arrange the pineapple slices over the brown sugar mixture, placing a cherry in the center of each pineapple slice.
4. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
5. In a large bowl, cream the granulated sugar and softened butter together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
6. Gradually add the dry ingredients to the butter mixture, alternating with the milk (or reserved pineapple juice), and mix until just combined.
7. Pour the batter over the arranged pineapple and cherries in the cake pan, spreading it evenly.
8. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
9. Remove from the oven and let cool for 5-10 minutes. Invert the cake onto a serving plate to reveal the beautifully caramelized topping. Enjoy!
