This delightful peach cake is a perfect way to celebrate the flavors of summer. With fresh peaches baked into a moist, tender cake, it’s a delicious treat that can be enjoyed on its own or with a scoop of ice cream.
Ingredients:
• 2 cups all-purpose flour
• 1 ½ teaspoons baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¾ cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 cup sour cream or yogurt
• 2 cups fresh peaches, peeled and diced (about 3-4 medium peaches)
• 1 teaspoon ground cinnamon (optional)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
4. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, and mix until just combined.
5. Gently fold in the diced peaches and cinnamon (if using) until evenly distributed.
6. Pour the batter into the prepared baking pan and spread it out evenly.
7. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Enjoy!
