Parsley and Walnut Pesto Pasta

This parsley and walnut pesto pasta is a vibrant and flavorful dish that’s quick to prepare. The fresh parsley and crunchy walnuts create a unique twist on traditional pesto, making it a delightful meal.

Ingredients:
• 12 ounces pasta of your choice (e.g., spaghetti, penne)
• 2 cups fresh parsley, packed
• 1 cup walnuts, toasted
• 2 cloves garlic
• 1/2 cup grated Parmesan cheese
• 1/2 cup olive oil
• 1 tablespoon lemon juice
• Salt and pepper to taste
• Extra Parmesan cheese for serving (optional)

Instructions:
1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and reserve 1/2 cup of the pasta cooking water.
2. While the pasta is cooking, prepare the pesto. In a food processor, combine the parsley, toasted walnuts, garlic, and Parmesan cheese. Pulse until finely chopped.
3. While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and well combined. Add lemon juice, and season with salt and pepper to taste.
4. In a large bowl, combine the cooked pasta and the parsley-walnut pesto. Toss until the pasta is well coated. If the pesto is too thick, add some reserved pasta cooking water, a tablespoon at a time, until desired consistency is reached.
5. Serve immediately, garnished with extra Parmesan cheese if desired. Enjoy your delicious parsley and walnut pesto pasta!
