This delicious parsley and feta stuffed chicken is a flavorful and satisfying dish. The combination of fresh herbs and creamy feta cheese makes it a perfect meal for any occasion.

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese, softened
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Toothpicks or kitchen twine for securing

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a mixing bowl, combine the chopped parsley, feta cheese, cream cheese, minced garlic, lemon juice, dried oregano, salt, and pepper. Mix until well combined.
3. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
4. Stuff each chicken breast with the parsley and feta mixture, then secure the openings with toothpicks or tie them with kitchen twine.
5. In an oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 4-5 minutes on each side until golden brown.
6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
7. Remove from the oven and let rest for a few minutes before removing toothpicks or twine.
8. Slice and serve warm, garnished with additional parsley if desired.
