Panko Roasted Brussels Sprouts

These panko roasted Brussels sprouts are a delightful and crunchy side dish that transforms the humble vegetable into a flavor-packed sensation. Tossed with olive oil and coated in crispy panko breadcrumbs, these sprouts are roasted to golden perfection, creating a tasty combination of textures and flavors. Ingredients:

  • 1 pound Brussels sprouts, trimmed and halved
  • 1/2 cup panko breadcrumbs
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder (or 3 cloves minced garlic)
  • 1 teaspoon onion powder (or small onion, finely chopped)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Optional: grated Parmesan cheese for topping
  • Optional: balsamic glaze for drizzling

Instructions:
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss the halved Brussels sprouts with 2 tablespoons of olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper until evenly coated.
3. In a separate bowl, mix the panko breadcrumbs with the remaining tablespoon of olive oil until the breadcrumbs are well coated.
4. Spread the seasoned Brussels sprouts in a single layer on the prepared baking sheet. Sprinkle the panko mixture evenly over the top of the Brussels sprouts.
5. Roast in the preheated oven for about 20-25 minutes, or until the Brussels sprouts are tender and the panko is golden brown and crispy. Toss halfway through for even cooking.
6. If using, sprinkle grated Parmesan cheese over the sprouts during the last few minutes of roasting, allowing it to melt slightly.
7. Remove from the oven and drizzle with balsamic glaze if desired.
8. Serve the panko roasted Brussels sprouts warm and enjoy this deliciously crispy side dish that adds a burst of flavor to any meal!
