Panko Green Bean Casserole

Ingredients:
• 1 pound fresh green beans, trimmed and cut into 2-inch pieces
• 1 cup sliced mushrooms (fresh or canned)
• 1/2 cup onion, finely chopped
• 2 cloves garlic, minced
• 1 cup sour cream
• 1 cup cream of mushroom soup (or homemade)
• 1 teaspoon soy sauce
• Salt and pepper, to taste
• 1 cup panko breadcrumbs
• 2 tablespoons olive oil
• 1/2 cup shredded cheddar cheese (optional)

Instructions:
1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart baking dish.
2. Bring a large pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until bright green and slightly tender. Drain and rinse under cold water to stop the cooking process. Set aside.
3. In a skillet over medium heat, add a little olive oil and sauté the chopped onion and garlic until softened, about 3-4 minutes. Add the sliced mushrooms and cook until they release their moisture and are tender.
4. In a large mixing bowl, combine the blanched green beans, sautéed onion and mushroom mixture, sour cream, cream of mushroom soup, soy sauce, salt, and pepper. Mix until well combined.
5. Transfer the green bean mixture to the prepared baking dish. If using, sprinkle the shredded cheddar cheese evenly on top.
6. In a separate bowl, mix the panko breadcrumbs with olive oil until evenly coated. Sprinkle the panko mixture over the top of the casserole.
7. Bake in the preheated oven for about 25-30 minutes, or until the casserole is bubbling and the panko topping is golden brown and crispy.
8. Remove from the oven and let cool for a few minutes before serving.
