Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped (fresh or frozen)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • Olive oil for drizzling

Instructions:
1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
2. In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until well combined.
3. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
4. Stuff each chicken breast with the cheese and spinach mixture, securing the opening with toothpicks if necessary.
5. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Italian seasoning, salt, and pepper.
6. Dredge each stuffed chicken breast first in the flour, shaking off any excess, then dip it into the beaten eggs, and finally coat it with the panko mixture, pressing gently to ensure the breadcrumbs adhere well.
7. Place the coated chicken breasts in the prepared baking dish and drizzle with olive oil to help them crisp up in the oven.
8. Bake in the preheated oven for about 30-35 minutes, or until the chicken is cooked through and the panko coating is golden brown and crispy.
9. Remove from the oven and let the chicken rest for a few minutes before slicing.
10. Serve the panko-crusted stuffed chicken breasts warm and enjoy this delightful dish that combines rich flavors and a satisfying crunch!
