Nettle Sourdough Bread

Nettle sourdough bread is a wholesome and flavorful loaf that combines the earthy taste of fresh nettles with the richness of sourdough and the sweetness of caramelized onions. This unique bread is not only delicious but also packed with nutrients, making it a delightful addition to any meal.

Ingredients:
• 2 cups all-purpose flour
• 1 cup whole wheat flour
• 1 cup active sourdough starter
• 1 cup warm water (about 110°F or 43°C)
• 1 cup fresh nettles, stems removed and finely chopped
• 1 medium onion, finely chopped
• 1 teaspoon salt
• 1 tablespoon olive oil

Instructions:
1. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until soft and caramelized, about 10-15 minutes. Remove from heat and let cool slightly.
2. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and salt.
3. In a separate bowl, mix the active sourdough starter with warm water, then add the cooled caramelized onions and chopped nettles. Stir to combine.
4. Add the wet ingredients to the dry ingredients and mix until a rough dough forms.
5. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
6. Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place until doubled in size, about 4-6 hours or overnight for better flavor.
7. Preheat your oven to 450°F (230°C). If using a Dutch oven, place it in the oven to heat.
8. Punch down the risen dough and shape it into a round loaf. Let it rest for 30 minutes.
9. Carefully transfer the dough to the hot Dutch oven or a baking sheet. Score the top with a sharp knife.
10. Bake in the preheated oven for about 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped.
