Nettle quiche is a flavorful and nutritious dish that combines the earthy taste of nettles with creamy eggs and cheese, all encased in a buttery crust. This versatile quiche can be enjoyed warm or at room temperature, making it a perfect option for brunch, lunch, or a light dinner.
Ingredients:
- 1 pre-made pie crust (or homemade)
- 1 cup fresh nettles, stems removed and chopped
- 4 large eggs
- 1 cup heavy cream or milk
- 1 cup grated cheese (such as Swiss, cheddar, or feta)
- 1 small onion, finely chopped
- 2-3 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for sautéing
Instructions:
1. Preheat your oven to 375°F (190°C). In a skillet, heat a splash of olive oil over medium heat and sauté the chopped onion and garlic until softened.
2. Add the chopped nettles to the skillet and cook for an additional 2-3 minutes until wilted. Remove from heat and let cool slightly.
3. In a mixing bowl, whisk together the eggs, cream or milk, salt, and pepper. Stir in the sautéed nettles and cheese.
4. Place the pie crust in a pie dish and pour the nettle mixture into the crust, spreading it evenly.
5. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
