Nettle pesto is a vibrant and flavorful twist on the traditional basil pesto, utilizing the nutrient-rich leaves of nettles for a unique taste. Ingredients:
• 4 cups fresh nettles, stems removed
• 1/2 cup nuts (such as pine nuts, walnuts, or almonds)
• 2-3 cloves garlic, minced
• 1/2 cup grated Parmesan cheese
• 1/2 cup olive oil
• Juice of 1 lemon
• Salt and pepper to taste
Instructions:
1. Blanch the nettles in boiling water for 2-3 minutes, then drain and rinse under cold water to stop the cooking process.
2. In a food processor, combine the blanched nettles, nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
