Nettle Fritters

Ingredients:

  • 2 cups fresh nettles, stems removed and roughly chopped
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk (or a non-dairy alternative)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Oil for frying (such as vegetable or olive oil)

Instructions:
1. In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
2. In another bowl, beat the eggs and then add the milk, mixing well.
3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
4. Fold in the chopped nettles and grated Parmesan cheese, if using.
5. Heat a generous amount of oil in a frying pan over medium heat.
6. Once the oil is hot, drop spoonfuls of the batter into the pan, flattening them slightly to form fritters.
7. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
8. Remove the fritters from the pan and place them on paper towels to drain any excess oil.
9. Serve warm with your favorite dipping sauce or enjoy them plain. These nettle fritters make a tasty and nutritious treat!
