Nettle Croquettes

Ingredients:

  • 2 cups fresh nettles, stems removed and finely chopped
  • 1 cup cooked potatoes, mashed
  • 1/2 cup grated cheese (such as cheddar or mozzarella)
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Oil for frying

Instructions:
1. In a large mixing bowl, combine the chopped nettles, mashed potatoes, grated cheese, breadcrumbs, egg, salt, black pepper, and garlic powder if using. Mix well until all ingredients are combined.
2. Shape the mixture into small oval or round croquettes, about 1-2 inches in size.
3. Heat oil in a frying pan over medium heat.
4. Once the oil is hot, carefully add the croquettes to the pan, frying them in batches to avoid overcrowding.
5. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
6. Remove the croquettes from the pan and place them on paper towels to drain any excess oil.
