Nettle Chutney

Nettle chutney is a vibrant and flavorful condiment that combines the unique taste of fresh nettles with spices and tangy ingredients. This versatile chutney pairs well with a variety of dishes and adds a nutritious kick to your meals.

Ingredients:
• 2 cups fresh nettles, stems removed and roughly chopped
• 1 small onion, chopped
• 2 cloves garlic, minced
• 1-2 green chilies, chopped (adjust to taste)
• 1/2 cup fresh cilantro or mint leaves
• 1 tablespoon lemon juice
• 1 tablespoon sugar (optional)
• 1/2 teaspoon salt
• 1/4 teaspoon cumin powder
• 1/4 teaspoon mustard seeds (optional)
• Water as needed

Instructions:
1. In a pan, heat a small amount of oil over medium heat. If using, add the mustard seeds and let them splutter.
2. Add the chopped onion and garlic to the pan, sautéing until the onion is soft and translucent.
3. Stir in the chopped green chilies and chopped nettles, cooking until the nettles are wilted, about 3-4 minutes.
4. Remove from heat and let the mixture cool slightly.
5. In a blender or food processor, combine the cooked nettle mixture with fresh cilantro or mint leaves, lemon juice, sugar (if using), salt, cumin powder, and a splash of water.
6. Blend until smooth, adding more water as needed to reach your desired consistency.
7. Taste and adjust seasoning if necessary.
8. Transfer the chutney to a jar and refrigerate. It can be enjoyed fresh or stored for up to a week. Serve with bread, crackers, or as a condiment for curries and grilled meats. Enjoy this delicious nettle chutney!
