Nettle and rice casserole is a comforting and hearty dish that combines fluffy rice with the nutritious goodness of fresh nettles, along with cheese and herbs for added flavor. This casserole is perfect for a family meal and can be enjoyed as a main course or a side dish.
Ingredients:
- 2 cups cooked rice (white or brown)
- 2 cups fresh nettles, stems removed and roughly chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (such as cheddar or mozzarella)
- 1/2 cup ricotta cheese (or cottage cheese)
- 1/2 cup vegetable or chicken broth (find my broth recipes HERE and HERE)
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano or thyme
- 1 tablespoon olive oil
- Optional toppings: additional cheese for sprinkling, fresh herbs for garnish
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
3. Add the minced garlic and chopped nettles to the skillet, cooking until the nettles are wilted, about 3-4 minutes. Remove from heat and let cool slightly.
4. In a large mixing bowl, combine the cooked rice, sautéed nettles and onion mixture, shredded cheese, ricotta cheese, vegetable or chicken broth, eggs, salt, black pepper, and dried herbs. Mix well until all ingredients are combined.
5. Transfer the mixture to a greased baking dish, spreading it out evenly. If desired, sprinkle additional cheese on top for a cheesy crust.
6. Bake in the preheated oven for about 30-35 minutes, or until the casserole is set and lightly golden on top.
