Nettle and Carrot Soup

Nettle and carrot soup is a vibrant and nourishing dish that combines the earthy flavor of fresh nettles with the natural sweetness of carrots. This healthy soup is easy to prepare and makes a delightful meal, especially when served with crusty bread.

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium carrots, peeled and diced
  • 4 cups vegetable broth (find my broth recipes HERE and HERE)
  • 2 cups fresh nettles, stems removed and roughly chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon (optional)
  • Fresh herbs for garnish (such as parsley or dill)

Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
2. Add the minced garlic and diced carrots to the pot, cooking for another 5 minutes until the carrots begin to soften.
3. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer until the carrots are tender, about 15-20 minutes.
4. Stir in the chopped nettles and cook for an additional 5 minutes until they are wilted and tender.
5. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
6. Season the soup with salt, black pepper, and lemon juice if desired.
7. Serve hot, garnished with fresh herbs if using. Enjoy this delicious nettle and carrot soup!
