Nettle and Bacon Scones

Nettle and bacon scones are a delightful savory treat that combines the earthy flavor of fresh nettles with crispy bacon. These scones are perfect for breakfast, brunch, or as a snack and can be enjoyed on their own or with butter.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter, chilled and diced
  • 1 cup cooked bacon, chopped
  • 1 cup fresh nettles, stems removed and roughly chopped
  • 3/4 cup milk or buttermilk
  • 1 large egg (for egg wash, optional)

Instructions:

1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
3. Add the chilled butter to the flour mixture and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
4. Stir in the chopped bacon and nettles until evenly distributed.
5. Gradually add the milk or buttermilk, mixing until just combined. Be careful not to overmix.
6. Turn the dough out onto a lightly floured surface and gently knead it a few times until it holds together.
7. Pat the dough into a circle about 1 inch thick. Use a sharp knife or a pizza cutter to cut the circle into wedges (like a pizza) or use a biscuit cutter to cut out rounds.
8. Place the scones on a baking sheet lined with parchment paper. If desired, brush the tops with a beaten egg for a golden finish.
9. Bake in the preheated oven for 15-20 minutes or until the scones are golden brown.
10. Remove from the oven and let cool slightly before serving. Enjoy your delicious nettle and bacon scones warm!
