Ingredients:
• 2 boneless, skinless chicken breasts
• 2 tablespoons jerk seasoning (store-bought or homemade)
• 1 tablespoon olive oil
• 4 sandwich buns (such as brioche or ciabatta)
• 1 cup lettuce, shredded
• 1 tomato, sliced
• 1/4 red onion, thinly sliced
• 1 avocado, sliced (optional)
• Mango salsa or a zesty sauce (optional)

Instructions:
1. In a bowl, combine the jerk seasoning and olive oil to create a marinade. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes (or up to overnight in the refrigerator).

3. Remove the chicken from the grill and let it rest for a few minutes before slicing.
4. Toast the sandwich buns on the grill or in a toaster.
5. To assemble the sandwiches, place a piece of sliced jerk chicken on the bottom half of each bun. Top with shredded lettuce, tomato slices, red onion, and avocado if using. Drizzle with mango salsa or your favorite zesty sauce.
6. Place the top half of the bun on each sandwich and serve immediately.
7. Enjoy this delicious jerk chicken sandwich as a spicy and satisfying meal that brings a taste of the Caribbean to your table!
