Grilled Shrimp Tacos with Cabbage Slaw and Lime Crema

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 2 cups green cabbage, shredded
  • 1/2 cup carrots, grated
  • 1/4 cup cilantro, chopped
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • Lime wedges for serving

Instructions
1. In a bowl, combine the shrimp, olive oil, chili powder, cumin, salt, and pepper. Toss to coat the shrimp evenly and let marinate for about 15 minutes.
2. Preheat a grill or grill pan over medium-high heat.
3. Grill the marinated shrimp for 2-3 minutes on each side, or until they turn pink and opaque. Remove from the grill and set aside.
4. In a separate bowl, mix the shredded cabbage, grated carrots, and chopped cilantro to create the slaw.
5. In another small bowl, whisk together the sour cream or Greek yogurt and lime juice to make the lime crema.
6. Warm the tortillas on the grill for about 30 seconds on each side or until pliable.
7. Assemble the tacos by placing a few grilled shrimp on each tortilla, topping with cabbage slaw, and drizzling with lime crema.
8. Serve with lime wedges on the side and enjoy your delicious grilled shrimp tacos!
