These grilled beef kebabs are marinated for extra flavor and then skewered with colorful vegetables. They make a delicious and fun dish for any barbecue or outdoor gathering.

Ingredients
- 1.5 pounds beef sirloin or ribeye, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons red wine vinegar
- 2 tablespoons Worcestershire sauce
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 bell pepper (any color), cut into chunks
- 1 cup crimini mushrooms
- 1 onion, cut into chunks
- 1 zucchini or summer squash, sliced into rounds
- Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)


Instructions
1. In a bowl, whisk together the olive oil, soy sauce, red wine vinegar, Worcestershire sauce, minced garlic, cumin, smoked paprika, salt, and pepper.
2. Add the beef cubes to the marinade and toss to coat. Cover and marinate in the refrigerator for at least 1 hour (up to overnight for more flavor).
3. Preheat your grill to medium-high heat.
4. Thread the marinated beef cubes onto the skewers, alternating with the bell pepper, mushroom, onion, and zucchini pieces.
5. Grill the kebabs for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are tender.
6. Remove the kebabs from the grill and let them rest for a few minutes.
7. Serve warm, with your choice of sides or over rice. Enjoy!
