These flavorful flank steak fajitas are marinated to perfection and cooked with bell peppers and onions. Served with warm tortillas, they make for a delicious and satisfying meal.

Ingredients
- 1.5 pounds flank steak
- 1/4 cup olive oil
- 1/4 cup lime juice
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 bell pepper (any color), sliced
- 1 onion, sliced
- Flour or corn tortillas (for serving)
- Optional toppings: sour cream, guacamole, salsa, and fresh cilantro



Instructions
1. In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper.
2. Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour (up to overnight for more flavor).
3. Preheat the grill or a grill pan over medium-high heat.
4. Remove the steak from the marinade and discard the marinade. Grill the flank steak for about 4-6 minutes per side, or until it reaches your desired level of doneness.
5. In the last few minutes of cooking, add the sliced bell pepper and onion to the grill to soften and char slightly.
6. Once cooked, let the steak rest for 5 minutes before slicing it against the grain into thin strips.
