Cucumber Noodle Stir-Fry

Ingredients:
• 2 large cucumbers, spiralized or julienned
• 1 bell pepper, sliced
• 1 carrot, julienned
• 1 cup snap peas or snow peas
• 2 cloves garlic, minced
• 1 tablespoon fresh ginger, grated
• 2 tablespoons soy sauce or tamari
• 1 tablespoon sesame oil
• 1 tablespoon olive oil
• 1 teaspoon sesame seeds (for garnish)
• Fresh cilantro or green onions (for garnish)

Instructions:
1. Heat the olive oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
3. Add the sliced bell pepper, julienned carrot, and snap peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
4. Add the spiralized or julienned cucumbers and soy sauce (or tamari) to the skillet. Stir-fry for an additional 2-3 minutes, just until the cucumbers are heated through but still crisp.
5. Drizzle with sesame oil and toss to combine.
6. Remove from heat and garnish with sesame seeds and fresh cilantro or green onions.
