Creamy Parsley Dressing

This creamy parsley dressing is a versatile and flavorful addition to salads, vegetables, or grilled meats. The fresh parsley gives it a bright flavor, while the creamy base makes it rich and satisfying.

Ingredients:
• 1 cup fresh parsley, chopped
• 1/2 cup Greek yogurt or sour cream
• 1/4 cup mayonnaise
• 2 tablespoons lemon juice
• 1 clove garlic, minced
• 1 teaspoon Dijon mustard
• Salt and pepper to taste
• Water (optional, for thinning)

Instructions:
1. In a food processor or blender, combine the chopped parsley, Greek yogurt (or sour cream), mayonnaise, lemon juice, minced garlic, and Dijon mustard.
2. Blend until smooth and creamy, scraping down the sides as needed.
3. Taste and season with salt and pepper as desired.
4. If the dressing is too thick, add a little water, one tablespoon at a time, until the desired consistency is reached.
5. Transfer the dressing to a serving bowl or jar and refrigerate for at least 30 minutes to allow the flavors to meld.
6. Serve over salads, as a dip for vegetables, or drizzled on grilled meats. Enjoy!
