Creamy carrot soup is a comforting and velvety dish that highlights the natural sweetness of carrots, creating a deliciously smooth and satisfying experience. This vibrant soup is perfect for chilly days or as a light appetizer. Easy to prepare and packed with nutrients, creamy carrot soup is a delightful way to enjoy a classic vegetable in a new and flavorful way!

Ingredients:
- 1 tablespoon olive oil or butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth (or chicken broth) (find my broth recipes HERE and HERE)
- 1 teaspoon ground cumin (optional)
- 1/2 cup coconut milk or heavy cream
- Salt and pepper to taste
- Fresh herbs (like parsley or cilantro) for garnish

Instructions:
1. In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
2. Add the minced garlic and cook for an additional minute, stirring to prevent burning.
3. Stir in the chopped carrots and ground cumin (if using), and cook for another 2-3 minutes.
4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer until the carrots are tender, about 20 minutes.
5. Using an immersion blender or a regular blender, purée the soup until smooth. If using a regular blender, be careful to allow steam to escape.
6. Stir in the coconut milk or heavy cream, and season with salt and pepper to taste. Heat through if necessary.
7. Serve the creamy carrot soup warm, garnished with fresh herbs. Enjoy this comforting and delicious soup as a nourishing treat!
