Clam Fritters

Savor the crispy and tender goodness of clam fritters, a delightful seafood treat that’s perfect as an appetizer or a light snack. These fritters are packed with flavor and can be served with a tangy dipping sauce.

Ingredients:
• 1 cup fresh clams, chopped (or canned clams, drained)
• 1 cup all-purpose flour
• 1/2 cup cornmeal
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 teaspoon cayenne pepper (optional)
• 1/2 cup milk
• 1 large egg, beaten
• 1/4 cup green onions, chopped
• 1/4 cup fresh parsley, chopped
• Vegetable oil (for frying)

For the Dipping Sauce:
• 1/2 cup mayonnaise
• 1 tablespoon lemon juice
• 1 teaspoon hot sauce (optional)
• Salt and pepper, to taste

Instructions:
1. In a large bowl, combine the flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper (if using).
2. In a separate bowl, whisk together the milk and beaten egg. Pour the wet ingredients into the dry ingredients and mix until just combined.
3. Fold in the chopped clams, green onions, and parsley until evenly distributed.
4. In a large skillet, heat about 1/2 inch of vegetable oil over medium heat.
5. Once the oil is hot, drop spoonfuls of the fritter batter into the oil, flattening them slightly with the back of the spoon. Fry in batches, being careful not to overcrowd the skillet.
6. Cook for about 3-4 minutes on each side or until golden brown and crispy. Remove the fritters and place them on a paper towel-lined plate to drain excess oil.
7. For the dipping sauce, mix together the mayonnaise, lemon juice, hot sauce (if using), salt, and pepper in a small bowl.
8. Serve the clam fritters warm, accompanied by the dipping sauce.
