Cinnamon Roll Muffins

Ingredients:

For the Muffins:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract

For the Cinnamon Swirl:

  • 1/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, softened

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:
1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
3. In a separate bowl, combine the melted butter, egg, milk, and vanilla extract. Mix until well combined.
4. Pour the wet ingredients into the dry ingredients and stir until just combined; be careful not to overmix.
5. In a small bowl, mix together the brown sugar, ground cinnamon, and softened butter to create the cinnamon swirl mixture.
6. Divide half of the muffin batter evenly among the muffin cups. Add a spoonful of the cinnamon swirl mixture on top of each muffin, then add the remaining muffin batter on top, covering the swirl.
7. Use a toothpick or skewer to gently swirl the cinnamon mixture into the batter for a marbled effect.
8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.
9. While the muffins are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
10. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Drizzle the glaze over the muffins before serving.
