This cauliflower fried rice is a delicious and healthy alternative to traditional fried rice, packed with colorful vegetables and protein-rich scrambled eggs. Quick to prepare, it’s a perfect weeknight meal that the whole family will love.
Ingredients
• 1 medium head of cauliflower, grated or processed into rice-sized pieces
• 1 cup mixed vegetables (frozen or fresh, such as peas, carrots, and corn)
• 2 large eggs, beaten
• 2 tablespoons soy sauce (or tamari for gluten-free)
• 2 tablespoons sesame oil (or vegetable oil)
• 2 cloves garlic, minced
• 1 teaspoon fresh ginger, minced (optional)
• 2 green onions, sliced
• Salt and pepper to taste
Instructions
1. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat.
2. Add the minced garlic and ginger (if using), and sauté for about 30 seconds until fragrant.
3. Push the garlic and ginger to the side of the skillet and pour in the beaten eggs, scrambling them until fully cooked.
4. Add the grated cauliflower and mixed vegetables to the skillet, stirring to combine with the eggs.
5. Pour in the soy sauce and the remaining tablespoon of sesame oil, mixing well to coat the cauliflower and vegetables.
6. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
7. Season with salt and pepper to taste and stir in the sliced green onions.
