Ingredients:
- 1 cup Arborio rice
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth (or chicken broth) (find my broth recipes HERE and HERE)
- 1 cup carrots, grated or finely chopped
- 1/2 cup white wine (optional)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. In a saucepan, heat the vegetable broth over low heat to keep it warm.
2. In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
3. Add the minced garlic and grated carrots, cooking for an additional 2-3 minutes until the carrots begin to soften.
4. Stir in the Arborio rice, coating it with the oil and vegetables for about 1-2 minutes until slightly toasted.
5. If using, pour in the white wine and stir until it is mostly absorbed by the rice.
6. Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
7. Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
