Carrot Casserole

• 1/2 cup grated cheddar cheese (optional)
• 1/2 cup breadcrumbs
• 2 large eggs, beaten
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon garlic powder (optional)
• 1/4 teaspoon paprika (for topping)

Instructions:
1. Preheat the oven to 350°F (175°C). Grease a 2-quart baking dish.
2. In a large mixing bowl, combine the grated carrots, chopped onion, sour cream, beaten eggs, salt, pepper, garlic powder (if using), and half of the cheese (if using). Mix well until all ingredients are fully combined.
3. Transfer the carrot mixture to the prepared baking dish, spreading it evenly.
4. In a small bowl, combine the breadcrumbs, remaining cheese, and paprika. Sprinkle the mixture evenly over the top of the casserole.
5. Bake in the preheated oven for 35-40 minutes, or until the casserole is set and the top is golden brown.
