Beet Salsa

Ingredients:
• 2 medium beets, roasted and diced
• 1/2 red onion, finely chopped
• 1-2 jalapeños, seeded and minced (to taste)
• 1 cup cherry tomatoes, quartered
• 1/4 cup fresh cilantro, chopped
• Juice of 1 lime
• Salt and pepper to taste

Instructions:
1. Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast for about 45-60 minutes, or until tender. Once cool, peel and dice the beets.
2. In a large mixing bowl, combine the diced roasted beets, chopped red onion, minced jalapeños, quartered cherry tomatoes, and chopped cilantro.
3. Squeeze fresh lime juice over the mixture and season with salt and pepper to taste.
4. Gently toss everything together until well combined.
5. Let the salsa sit for at least 15 minutes to allow the flavors to meld.
