Ingredients:
• 4 cups shredded green cabbage
• 1 cup shredded purple cabbage
• 1 cup grated carrots
• 1 red bell pepper, thinly sliced
• 1/2 cup green onions, chopped
• 1/4 cup chopped cilantro (optional)
• 1/4 cup chopped peanuts or sesame seeds for garnish

For the Dressing:
• 1/4 cup rice vinegar
• 2 tablespoons soy sauce
• 1 tablespoon sesame oil
• 1 tablespoon honey or maple syrup
• 1 teaspoon grated fresh ginger
• Salt and pepper to taste

Instructions:
1. In a large mixing bowl, combine the shredded green cabbage, purple cabbage, grated carrots, red bell pepper, green onions, and cilantro (if using).
2. In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or maple syrup, grated ginger, salt, and pepper until well combined.
3. Pour the dressing over the vegetable mixture and toss gently to coat all the ingredients.
4. Let the slaw sit for about 15-20 minutes to allow the flavors to meld and the vegetables to soften slightly.
5. Just before serving, garnish with chopped peanuts or sesame seeds for added crunch.
