Ingredients:
- 1 cup bulgur wheat, rinsed

- 2 cups fresh parsley, finely chopped
- 1/2 cup fresh mint, finely chopped
- 1 cup tomatoes, diced
- 1/2 cucumber, diced
- 1/4 cup red onion, finely chopped
- Juice of 2 lemons
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
1. In a medium saucepan, bring the water or vegetable broth to a boil. Add the bulgur wheat, stir, then cover and remove from heat. Let it sit for about 15-20 minutes, or until the bulgur is tender and the liquid is absorbed. Fluff with a fork and let it cool.
2. In a large mixing bowl, combine the chopped parsley, mint, tomatoes, cucumber, and red onion.
3. Add the cooled bulgur to the vegetable mixture.
4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
