Spicy Daikon Soup

Ingredients:

  • 1 large daikon radish, peeled and diced
  • 4 cups vegetable broth or chicken broth (find my broth recipes HERE and HERE)
  • 1-2 tablespoons chili paste or sriracha (adjust to taste)
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green onions, chopped (for garnish)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • Optional: bok choy or baby spinach
  • Salt and pepper to taste

Instructions:
1. In a large pot, heat the sesame oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
2. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
3. Add the diced daikon radish to the pot and stir to combine. Cook for a few minutes until the daikon starts to soften.
4. Pour in the vegetable or chicken broth and bring the mixture to a simmer.
5. Add the chili paste or sriracha and soy sauce, stirring to combine. Let the soup simmer for about 15-20 minutes, or until the daikon is tender.
6. If using, add bok choy or baby spinach during the last few minutes of cooking until wilted.
7. Season the soup with salt and pepper to taste. Serve hot, garnished with chopped green onions. Enjoy this spicy daikon soup as a flavorful and invigorating dish that will warm you from the inside out!
