Pumpkin Cheesecake

Pumpkin cheesecake is a rich and creamy dessert that beautifully combines the classic flavors of pumpkin pie with the smooth texture of cheesecake. Ingredients:
For the crust:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup granulated sugar
• 1/2 cup unsalted butter, melted

For the filling:
• 3 (8 oz) packages cream cheese, softened
• 1 cup granulated sugar
• 1 cup pumpkin puree (canned or fresh)
• 3 large eggs
• 1 teaspoon vanilla extract
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon ground ginger
• 1/4 teaspoon salt

For the topping (optional):
• Whipped cream
• Ground cinnamon or nutmeg for garnish

Instructions:
1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
3. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 8-10 minutes, then remove from the oven and let it cool slightly.
4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
5. Gradually add the granulated sugar and beat until well combined.
6. Add the pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until everything is thoroughly combined and smooth.
7. Pour the pumpkin cheesecake filling over the cooled crust, smoothing the top with a spatula.
8. Bake for 55-65 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour to cool gradually.
9. Once cooled, remove the cheesecake from the oven and refrigerate for at least 4 hours, or preferably overnight, to set completely.
