This classic Pad Thai is a beloved Thai street food dish that features stir-fried rice noodles tossed in a flavorful sauce, with fresh vegetables, proteins, and topped with crushed peanuts. Quick and easy to prepare, it’s a delicious meal that brings the vibrant flavors of Thailand to your kitchen.

Ingredients
- 8 oz rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup firm tofu, cubed (or shrimp/chicken)
- 2 large eggs, lightly beaten
- 1 cup bean sprouts
- 1/2 cup green onions, chopped
- 1/4 cup roasted peanuts, crushed
- 1 lime, cut into wedges
For the Sauce
- 3 tablespoons fish sauce (or soy sauce for a vegetarian option)
- 1 tablespoon tamarind paste
- 2 tablespoons sugar
- 1 teaspoon chili powder (adjust to taste)




Instructions
1. Cook the rice noodles according to package instructions, then drain and set aside.
2. In a small bowl, whisk together the fish sauce, tamarind paste, sugar, and chili powder to make the sauce. Set aside.
3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
4. Add the cubed tofu (or shrimp/chicken) to the skillet and cook until browned and cooked through.
5. Push the tofu to one side of the skillet and pour the beaten eggs into the empty side, scrambling them until fully cooked.
6. Add the cooked rice noodles to the skillet, then pour the sauce over the noodles. Toss everything together until well combined and heated through.
7. Gently fold in the bean sprouts and green onions, cooking for an additional 1-2 minutes.
