Mediterranean Couscous Salad

Ingredients:

  • 1 cup couscous

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • Optional: 1/4 cup pine nuts or sunflower seeds for crunch

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:
1. In a medium saucepan, bring the vegetable broth or water to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork and allow it to cool.
2. In a large mixing bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.
3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper until well combined.
4. Pour the dressing over the couscous salad and toss gently to coat all the ingredients.
5. If desired, sprinkle with pine nuts or sunflower seeds for added crunch.
