Ingredients:
- 1 cup farro, rinsed

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley or basil, chopped
- 1/4 cup feta cheese, crumbled (optional)
For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey or maple syrup (optional)
- Salt and pepper to taste
Instructions:
1. In a medium saucepan, combine the farro and water or vegetable broth. Bring to a boil, then reduce to a simmer and cook for about 25-30 minutes, or until farro is tender but still chewy. Drain any excess liquid and let it cool.
2. In a large mixing bowl, combine the cooked farro, cherry tomatoes, cucumber, bell pepper, red onion, and fresh herbs.
3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey or maple syrup (if using), salt, and pepper until well combined.
