Fried rice is a versatile and delicious dish that can be made with a variety of ingredients. This easy recipe is a great way to use leftover rice and can be customized with your favorite vegetables, proteins, and seasonings.
Ingredients
• 3 cups cooked rice (preferably day-old, cold rice works best)
• 2 tablespoons vegetable oil (or sesame oil for added flavor)
• 2 large eggs, beaten
• 1 cup mixed vegetables (such as peas, carrots, and corn)
• 1 small onion, diced
• 2-3 green onions, chopped
• 2-3 cloves garlic, minced
• 3-4 tablespoons soy sauce (to taste)
• 1 tablespoon oyster sauce (optional)
• Salt and pepper, to taste
• Cooked protein of choice (optional: chicken, shrimp, tofu, etc.)
• Sesame seeds, for garnish (optional)
Instructions
1. Prepare the Rice:
If you haven’t already, cook the rice according to package instructions and let it cool. Day-old rice works best as it’s drier and prevents clumping.
2. Heat the Oil:
In a large skillet or wok, heat the vegetable oil over medium-high heat.
3. Scramble the Eggs:
Pour the beaten eggs into the skillet and scramble until fully cooked. Remove the eggs from the skillet and set aside.
4. Sauté the Vegetables:
In the same skillet, add a bit more oil if needed. Sauté the diced onion and minced garlic for about 2-3 minutes until the onion is translucent. Add the mixed vegetables and cook for another 2-3 minutes until they are heated through.
5. Add the Rice:
Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for about 3-4 minutes, allowing the rice to get heated through and slightly crispy.
6. Season the Rice:
Pour the soy sauce and oyster sauce (if using) over the rice. Stir well to coat the rice evenly. Add salt and pepper to taste. If using cooked protein, add it at this stage and stir until heated through.
7. Add the Eggs and Green Onions:
Gently fold in the scrambled eggs and chopped green onions. Stir until everything is well combined and heated through.
8. Serve:
Remove from heat and garnish with sesame seeds if desired. Serve your fried rice hot and enjoy!
