- 1 cup mushrooms, sliced (such as shiitake or button)
- 1 cup bok choy or spinach
- 1 carrot, julienned
- 2-3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2-3 green onions, chopped (for garnish)
- 2 tablespoons soy sauce or tamari
- 1 tablespoon sesame oil
- Optional: tofu or cooked chicken for added protein
- Salt and pepper to taste



Instructions:
1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1-2 minutes until fragrant.
2. Add the sliced mushrooms and julienned carrot to the pot, cooking for another 3-4 minutes until the vegetables begin to soften.
