Daikon Miso Soup

Ingredients:

  • 1 large daikon radish, peeled and diced, or thinly sliced with a mandoline
  • 4 cups vegetable broth (or dashi for a more authentic flavor) (find my broth recipes HERE and HERE)
  • 1/2 cup silken tofu, cubed (optional)
  • 2-3 tablespoons miso paste (adjust to taste)
  • 1 tablespoon soy sauce (optional)
  • 2 green onions, chopped
  • 1 cup spinach or bok choy (optional)
  • Seaweed (such as wakame), rehydrated (optional)
  • Sesame seeds for garnish (optional)

Instructions:
1. In a large pot, bring the vegetable broth (or dashi) to a gentle simmer over medium heat.
2. Add the daikon radish and cook for about 10-15 minutes, or until the daikon is tender.
3. If using, add the cubed silken tofu and spinach or bok choy to the pot, cooking for an additional 2-3 minutes until heated through.
4. In a small bowl, mix the miso paste with a few tablespoons of the hot broth until smooth. This helps to dissolve the miso without clumping.
5. Remove the pot from heat and stir in the miso mixture, along with soy sauce (if using) and rehydrated seaweed.
