Daikon and Carrot Soup

Daikon and carrot soup is a vibrant and wholesome dish that beautifully combines the subtle sweetness of carrots with the mild flavor of daikon radish. Ingredients:

  • 1 large daikon radish, peeled and diced
  • 2-3 medium carrots, peeled and diced
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 4 cups vegetable broth or chicken broth (find my broth recipes HERE and HERE)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin (optional)
  • Salt and pepper to taste
  • Fresh herbs for garnish (such as parsley or cilantro)
  • Optional: a splash of lemon juice for brightness

Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
2. Stir in the minced garlic and cook for an additional minute until fragrant.
3. Add the diced daikon radish and carrots to the pot, cooking for about 5-7 minutes until they start to soften.
4. Pour in the vegetable or chicken broth and bring to a simmer. If using, add the ground cumin for added flavor.
5. Let the soup simmer for about 20-25 minutes, or until the daikon and carrots are tender.
6. Remove from heat and, if desired, use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
