Ingredients:
• 4 cups grated carrots
• 4 cups whole milk

• 2 tablespoons raisins (optional)
• A pinch of saffron strands (optional)
Instructions:
1. In a heavy-bottomed pan, add the grated carrots and whole milk. Cook over medium heat, stirring occasionally, until the mixture thickens and the milk reduces, about 30-40 minutes.
2. Once the milk has reduced, add the sugar and stir well. Continue to cook, stirring frequently, until the sugar dissolves and the mixture thickens further, about 10-15 minutes.
3. In a separate small pan, heat the ghee over medium heat. Add the cardamom powder and chopped nuts, sautéing for a few minutes until fragrant. If using, add the raisins and saffron strands, cooking for an additional minute.
