Ingredients:
• 1 French baguette or Vietnamese banh mi bread
• 1 pound pork tenderloin or chicken breast, thinly sliced
• 2 tablespoons soy sauce
• 1 tablespoon fish sauce
• 1 tablespoon sugar
• 1 tablespoon vegetable oil
• 1 cucumber, thinly sliced
• 1 carrot, julienned
• 1 daikon radish, julienned (optional)
• Fresh cilantro leaves
• 1-2 jalapeños, sliced (optional for heat)
• Mayonnaise or spicy mayo (to taste)
• Salt and pepper, to taste
Instructions:
1. In a bowl, combine the soy sauce, fish sauce, sugar, vegetable oil, salt, and pepper. Add the sliced pork or chicken and marinate for at least 30 minutes.
2. While the meat is marinating, prepare the pickled vegetables. In a small bowl, mix the julienned carrot and daikon with a pinch of salt and sugar. Let it sit for about 15-20 minutes to soften.
3. Heat a grill or skillet over medium-high heat. Cook the marinated meat for about 3-4 minutes per side, or until fully cooked and slightly caramelized. Remove from heat and let it rest for a few minutes, then slice.
4. Slice the baguette lengthwise, leaving one side attached to create a hinge. Toast the inside if desired.
5. Spread mayonnaise or spicy mayo on the inside of the baguette. Layer the sliced meat, pickled vegetables, cucumber, cilantro, and jalapeños inside the bread.
6. Close the sandwich and press down gently. Slice in half and serve immediately.
7. Enjoy this delicious banh mi as a flavorful and satisfying meal that brings a taste of Vietnam to your table!
