Avocado Tomato Basil Soup

Ingredients:

  • 4 ripe tomatoes, chopped
  • 2 ripe avocados, pitted and peeled

  • 1/2 cup fresh basil leaves
  • 1 clove garlic, minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil for drizzling (optional)
  • Additional basil leaves for garnish (optional)

Instructions:
1. In a blender, combine the chopped tomatoes, avocados, vegetable broth, fresh basil leaves, minced garlic, and lime juice.
2. Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed.
3. Taste the soup and season with salt and pepper to your liking. If you prefer a thinner consistency, you can add more vegetable broth until you reach your desired texture.
4. Transfer the soup to a bowl or container, cover, and refrigerate for at least 30 minutes to chill.
