Avocado and Black Bean Soup

Avocado and black bean soup is a creamy and nourishing dish that brings together the rich flavors of avocados and hearty black beans, creating a comforting and satisfying meal. Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 2 ripe avocados, pitted and peeled

  • 1 cup cooked onions (about 1 medium onion)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder (optional)
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Sliced avocado and tortilla chips for topping (optional)

Instructions:
1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
2. Add the minced garlic, ground cumin, and chili powder (if using) to the pot, cooking for an additional minute until fragrant.
3. Stir in the black beans, vegetable broth, and lime juice, bringing the mixture to a gentle simmer. Cook for about 5 minutes to allow the flavors to meld.
4. Remove the pot from heat and let it cool slightly. Add the avocados to the pot and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the mixture in batches to a blender.
5. Return the soup to the pot and reheat gently if needed. Season with salt and pepper to taste.
