Homemade Apple Cider Vinegar

Crafting your own apple cider vinegar at home is a rewarding process that allows you to enjoy a tangy, flavorful condiment with numerous health benefits. With just a few simple ingredients and some patience, you can transform leftover apple scraps into a delicious vinegar that enhances salads, marinades, and more.

Ingredients:

  • 10-12 organic apples (cores and peels are fine)
  • 1 cup sugar (or honey)
  • 1 gallon filtered water
  • 1 cup unfiltered apple cider vinegar (with the “mother”) or a piece of cheesecloth

Instructions:

1. Prepare the Apples: Chop the apples into small pieces, including cores and peels, and place them in a large glass jar or bowl.

2. Create the Sugar Solution: In a separate container, dissolve the sugar in filtered water. Pour the sugar water over the chopped apples until they are fully submerged, leaving some space at the top of the jar.

3. Cover and Ferment: If using unfiltered apple cider vinegar, add it to the mixture now. Cover the jar with a clean cloth or cheesecloth secured with a rubber band, allowing air to flow while keeping dust and insects out. Store in a dark, warm place (around 60-80°F) for about 3-4 weeks, stirring every few days.

4. Strain and Age: After 3-4 weeks, strain out the apple pieces using a fine-mesh strainer or cheesecloth. Transfer the liquid back into a clean jar, cover it again, and let it ferment for an additional 4-6 weeks, tasting periodically until it reaches your desired acidity.

5. Store: Once ready, transfer the apple cider vinegar to a clean bottle and seal it. Store it in a cool, dark place and enjoy it in your favorite recipes!
