Ingredients:

• 4 large eggs
• 1/2 cup canned black beans, rinsed and drained
• 1/2 cup fresh salsa (store-bought or homemade)
• 2 whole wheat tortillas
• 1/4 cup shredded cheese (optional)
• 1 tablespoon olive oil or cooking spray
• Salt and pepper to taste
• Chopped cilantro for garnish (optional)

Instructions:

1. In a bowl, whisk the eggs and season with salt and pepper.
2. Heat olive oil in a non-stick skillet over medium heat, then pour in the whisked eggs. Scramble the eggs until fully cooked, about 3-4 minutes.
3. Add the black beans to the skillet with the eggs, mixing until heated through, about 1-2 minutes.
4. Warm the whole wheat tortillas in a separate skillet or microwave for a few seconds until pliable.

6. Roll the tortillas tightly to form burritos, folding in the sides as you roll.
