Zucchini Fritters

Zucchini fritters are a delicious and versatile dish that transforms fresh zucchini into crispy, golden bites full of flavor. Perfect as a snack, appetizer, or side dish, they are easy to make and can be served with a variety of dipping sauces or toppings.

Ingredients
• 2 medium zucchinis, grated
• 1 teaspoon salt
• 1/2 cup all-purpose flour
• 1/4 cup grated Parmesan cheese
• 1 large egg, beaten
• 1/4 teaspoon black pepper
• 1/4 teaspoon garlic powder
• Oil for frying
• Optional: sour cream or yogurt for serving

Instructions
1. Place the grated zucchini in a clean kitchen towel or cheesecloth and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture, then wring out the towel to remove as much liquid as possible.
2. In a mixing bowl, combine the drained zucchini, flour, Parmesan cheese, beaten egg, black pepper, and garlic powder until well mixed.
3. Heat oil in a skillet over medium heat. Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon.
4. Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
5. Serve warm with sour cream or yogurt, if desired, for a refreshing complement to the fritters.
