Vegetable Spring Rolls

These vegetable spring rolls are a fresh and vibrant appetizer, packed with a colorful assortment of crisp vegetables and fragrant herbs. Light and healthy, they are perfect for dipping in a zesty sauce and make for an excellent snack or party dish.

Ingredients
• 8 rice paper wrappers
• 1 cup shredded carrots
• 1 cup cucumber, julienned
• 1 cup bell pepper, thinly sliced
• 1 cup red cabbage, shredded
• 1/2 cup fresh cilantro leaves
• 1/2 cup fresh mint leaves
• Optional: sliced avocado for added creaminess
• Dipping sauce (peanut sauce, hoisin sauce, or sweet chili sauce)

Instructions
1. Prepare a large bowl of warm water for soaking the rice paper wrappers. Dip one wrapper into the water for about 10-15 seconds, or until it becomes pliable, then transfer it to a clean surface.
2. In the center of the wrapper, layer a small handful of shredded carrots, cucumber, bell pepper, red cabbage, cilantro, mint, and avocado if using.
3. Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to form a spring roll. Repeat with the remaining wrappers and filling.
4. Serve the vegetable spring rolls immediately with your choice of dipping sauce for a refreshing and flavorful treat.
5. If making ahead, cover the rolls with a damp cloth to prevent them from drying out until ready to serve.
