This Thai peanut chicken dish brings a delightful fusion of flavors, featuring tender chicken pieces coated in a creamy peanut sauce alongside a colorful mix of vegetables. Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
- 1 cup brown rice, cooked
- 1/2 cup natural peanut butter
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons vegetable oil
- Chopped peanuts and cilantro for garnish (optional)




Instructions
1. In a small bowl, whisk together the peanut butter, soy sauce, honey or maple syrup, lime juice, garlic, and ginger until smooth. Set aside.
2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes, or until they are cooked through and no longer pink.
3. Add the mixed vegetables to the skillet and stir-fry for another 3-4 minutes, or until the vegetables are tender-crisp.
4. Pour the peanut sauce over the chicken and vegetables, stirring to coat everything evenly. Cook for an additional 2-3 minutes until heated through.
