Thai Peanut Chicken

This Thai peanut chicken dish brings a delightful fusion of flavors, featuring tender chicken pieces coated in a creamy peanut sauce alongside a colorful mix of vegetables. Served over wholesome brown rice, it’s a satisfying and nutritious meal that’s perfect for a weeknight dinner or a special occasion.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
  • 1 cup brown rice, cooked
  • 1/2 cup natural peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • Chopped peanuts and cilantro for garnish (optional)

Instructions
1. In a small bowl, whisk together the peanut butter, soy sauce, honey or maple syrup, lime juice, garlic, and ginger until smooth. Set aside.
2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes, or until they are cooked through and no longer pink.
3. Add the mixed vegetables to the skillet and stir-fry for another 3-4 minutes, or until the vegetables are tender-crisp.
4. Pour the peanut sauce over the chicken and vegetables, stirring to coat everything evenly. Cook for an additional 2-3 minutes until heated through.
5. Serve the Thai peanut chicken over cooked brown rice, garnished with chopped peanuts and cilantro if desired.
